Happy start 2022! This year again, here is the post-party binge recycling recipe, let’s avoid wasting and let’s avoid keeping the leftovers of panettone / pandoro until Easter. For this simple preparation I used Pandoro, but it can also be done with Panettone. It is very versatile and you can fill the dome with the cream of your choice, to stick with the recycling theme, I had some unused cream and I threw it in it. I also recommend ice cream, the only thing is that with the ice cream filling you need to put the dome in the freezer, so make some room and remove the left over cappelletti from Christmas 2020. The beauty of these recipes is being able to adapt them based on what you find in the fridge, anything combined with pandoro will be delicious (unless it’s anchovies), dry biscuits, nougat or crunchy dried fruit, the variations are many, everything q.s. The topping is always made of cream left over from the filling, leftover of the leftover, a sprinkling of cocoa and a few hazelnuts here and there, the done is ready to be enjoyed. If this becomes another leftover, give it to your neighbor!

Ingredients
Leftover pandoro q.s.
500gr of whipping cream
50 gr of dark chocolate
Hazelnut cream q.s.
Limoncello q.s.
Coconut milk q.s.
Petit biscuits q.s.
COVER
Whipping cream q.s.
Unsweetened cocoa powder q.s.
Hazelnuts q.s.
Method
1. Cover the bottom of a large bowl with cling film, cut strips of Pandoro and cover the entire surface thus creating a shell. Wet the Pandoro with the coconut milk and the limoncello liqueur to taste
2. Melt the dark chocolate in a bain-marie or microwave, set aside. Whip the cream until firm peaks and divide it into two containers, in a container add the cold melted chocolate and mix from bottom to top
3. Create a first layer of simple cream, spreading it well on the bottom of the Pandoro covered bowl, add a few tablespoons of hazelnut cream and then a layer of dry biscuits. Spread the second layer of chocolate cream and close it all with more pandoro strips
4. Seal tightly with cling film and leave to rest in the refrigerator for one hour
FOR THE COVER
1. After the resting time, turn the dome upside down on a serving dish, gently removing the transparent film. Complete by covering it with cream, a sprinkling of bitter cocoa and hazelnuts on the surface.
