These mini cookies are small bites of goodness, great for breakfast dipped in milk, excellent as a snack any time of the day.
For Christmas I received as a gift 1 kg of dates brought overseas from Dubai, I don't think you can imagine how soft, sweet and delicious they are. Since 1 kg of dates snacked here and there I might be able to finish it next Christmas, I thought of using them for some recipes. I really experimented on this one with the ingredients I had at home, blended all and got a very soft and flavorful sort of short crust pastry. I enriched the cookies with peanut butter which goes great with dates (I leave you the recipe here), then a little coconut and, why not, even some chocolate chips. The result surprised me, they are really delicious, not crunchy but remain soft inside, the dates give softness and a unique super sweet flavor. In the end, thank goodness that the dates are 1 kg, the cookies have gone already, we have to fix it immediately with other batches!

Ingredients
125 gr pitted dates
50 gr of brown sugar
60 gr of soft butter
1 tbsp of peanut butter
1/2 bag of baking powder
2 tbsp of coconut milk
125 gr of plain flour
10 gr of shredded coconut
20 gr of almond flour
Chocolate chips q.s.
Method
1. In a mixer add dates, brown sugar, soft butter, peanut butter, operate at maximum speed. Add the coconut milk and mix again until you get a soft batter
2. In a large bowl add flour and yeast to the date batter, knead to obtain a homogeneous mixture, then add coconut flour and almond flour, lastly the chocolate chips and mix everything well
3. Shape into small balls and place them on the baking tray lined with parchment paper, bake the mini cookies in a fan assisted oven at 160 ° for about 13-15 minutes. Remove from the oven and leave to cool
