Strawberry chia pudding


Strawberry Chia Seed Pudding is a fresh and nutritious breakfast but also a light and healthy dessert.

Chia seeds are small dark oily seeds native to Guatemala and central Mexico, rich in calcium and omega-3, excellent for bowel regularity and beneficial for nervous system and heart.

The characteristic of these seeds is that they expand when immersed in water for several minutes, becoming gelatinous. In fact, it is possible to make pudding by just adding water even if it lacks flavor, chia seeds themselves are in fact quite anonymous, so it is advisable to mix them with a vegetable milk and add other ingredients to flavor them. The combinations are many and, for the summer, I thought that strawberries were perfect both in taste and as a cheerful presentation.

Chia pudding can be accompanied by both sweet creams and fruit yogurt or layered together with crumbled biscuits or sponge cake like a tiramisu, enriched with fresh fruit of your liking, nut butter to taste, dried fruit or chocolate chips for your sweet tooth.


Tips

It can be prepared just before serving, soaking the chia seeds for at least 15 minutes, the consistency will be gelatinous but will remain a little more runny, if you prefer a more compact pudding, leave it in the refrigerator overnight. Also excellent as a breakfast or snack on the go, keep it in airtight containers and enjoy it wherever you want.

Ingredients

10 strawberries

100 ml of coconut milk

2 tbsp of chia seeds

1 tsp of maple syrup

Vegetable vanilla yoghurt q.s.


DECORATION

Strawberries q.s.



Method

1. With the help of a blender, reduce the strawberries into a puree. In a bowl, add the strawberry puree, chia seeds, maple syrup and coconut milk, mixing to blend the ingredients well


2. Cover the bowl with cling film or transfer the pudding to an airtight container and let it rest in the refrigerator overnight


3. Before enjoying, add vegetable yoghurt to the chia pudding and top with fresh fruit pieces
