Vegan and Gluten Free Halloween Mummy Tart

The mummy tart may seem a classic tart but, as the little eyes of the little monsters hide between the pastry and the jam, the tart hides a non ordinary preparation, it is in fact made with a gluten-free and vegan shortcrust pastry, therefore without butter. This shortcrust pastry seems to be having no hopes when it comes to rolling, do keep a little hope instead because, despite being initially crumbly, it becomes compact by kneading for a longer time obtaining a shortcrust pastry very similar to a regular one. For the filling, I chose strawberry jam from the farm Dal Contadino a Casa Tua, really delicious and the deep red color recalls blood which is perfect for the theme. To make the tart "halloweenesque" just place the strips of pastry to imitate the bandages of a mummy and use meringues for the eyes of the little monsters, for the pupils I used a bit of left over chocolate from other preparations. Et voilà, a nice treat for adults and children, perfect to amaze with simplicity.

Recipe

Preparation time 10 minutes + 1 hour rest

Cooking time 30 minutes

Servings Rectangular tart tin 35x11 cm


Ingredients

210 grams of sugar

70 gr of extra virgin olive oil

70 gr of peanut oil

125 gr of water

Zest of 1 lemon

1 bag of vanillin

12 gr of baking powder


Decoration

Meringues q.s.

Dark chocolate q.s.


Method

1. In a large bowl pour extra virgin olive oil and peanut oil together with water, sugar and lemon zest, mix with a spoon. Add the sifted flour with baking powder all at once


2. Continue to mix with the spoon and transfer to the work surface to knead by hand forming a compact dough, wrap it in cling film and let it rest in the refrigerator for at least an hour


3. After resting, roll out the vegan shortcrust pastry maintaining a height of half a centimeter. Place the pastry on the tart tin and remove the excess from the edges. Pierce the base with a fork


4. Pour in the jam and level it well with a spatula. With the remaining pastry cut strips of various lengths and heights to create a pattern resembling the mummy's bandages. Bake at 180 ° in the oven fan assiste for about 30 minutes, allow to cool completely


5. Once cooled, pair the meringues placing them randomly between the shortcrust strips. Melt a little dark chocolate in the microwave and draw the pupils on the meringues with a toothpick
