The butter obtained from almonds is very versatile, you can use it in both sweet and savory recipes. Its preparation is similar to that of peanut butter of which you will find the recipe here. The finely grouned for several minutes dried fruit releases the oil that is naturally found inside turning into a paste. Almond butter has a color that varies depending on the type of almonds used, I used peeled almonds, but it can also be done with unpeeled ones resulting in a more intense color. Remember to toast them to emphasize their flavor.
As I said, it has various uses and is the excellent substitute (when without honey) for butter obtained from cow's milk, in fact it is used a lot in vegan plant-based cooking. Did you know that it can also be used to whisk a risotto?
Of course you can also add it in your sweet preparations to enrich muffins, cakes and biscuits, but also smoothies, yogurt and porridge or simply to spread on a toast or pan cakes for breakfast.
Happy baking!
