I had friends over for dinner one night, I got home later than expected and consequently there was not much time left to prepare food. In reality, however, I had not thought about what to do, especially for dessert, due to too many things going on in the last few days.
My pride, however, kept me from stopping to buy ice cream somewhere, even if that always saves you, but friends now have certain expectations and I cannot disappoint.
What to do then? A quick, easy, but also good and nice dessert to present? In these cases I always throw myself on the spoom desserts and what better opportunity to use the peach which is one of my favorite fruits. Peaches cooked in sugar on the bottom and a light foam of cream and yogurt on top, some crumbled amaretto to decorate. The cream with the addition of yogurt has a more interesting and fresh flavor, personally I dislike whipped cream and sugar only, but it depends on preferences.
Tips
You can prepare the individual elements and assemble them just before serving or, as I did, fill the cups in advance and leave them in the fridge to set. If time permits you can prepare any homemade crumble of your taste, but in this case it would no longer be a quick recipe. If you do not like the whipped cream you can replace it with ricotta and the addition of a little icing sugar.

Ingredients
2 nectarine peaches
3 tbsp of brown sugar
125 gr of peach or apricot yogurt
125 gr fresh cream (I have used a plant based)
Decoration
Amaretti q.s.
Fresh mint leaves q.s.
Method
1. Cut the peaches into small pieces, add them to a pan with the brown sugar, cook over low heat until juicy and macerated. Cook them for about five minutes, leave to cool completely
2. Whip the plant based cream and add the yogurt, mixing with a spatula from bottom to top, transfer the cream into a piping bag
3. Pour the peaches on the bottom of the cups and on top add the cream and yogurt with the help of the piping bag, decorate with the crumbled amaretti and fresh mint leaves
